Tater Tot Casserole

1 lb. hamburger
small onion
1 bag frozen tater tots
1 can cheddar cheese soup
1 can cream of mushroom soup
2 cups milk
mild cheddar cheese

Layer frozen tater tots in 9 x 13 baking dish.  Fry hamburger with onion with your preferred seasoning, then drain grease.  Place hamburger and onion over top of frozen tater tots.  Can also add corn or green beans (drain juice).  Mix cheddar cheese soup and mushroom soup together with milk.  Add a little more milk to avoid being too thick.  Pour over hamburger.  Bake in oven at 350 degrees for about 1 hour.  Add cheese on top after its finished baking.


Fried Rice

1/3 stick of butter
3 bullion cubes
3 cups of water
2 onions (chopped)

Melt butter in a heavy skillet.  Add onions and rice and fry until golden brown.  Add hot water in which cubes have been dissolved.  Cover and cook over low heat for a half hour.


Baked Ranch Tomatoes

2 tomatoes cut in half
1/4 tsp. dried Italian seasoning
1 1/2 tbsp. commercial Ranch-style dressing
Optional - garnish/parsley

Place tomato halves in 8-inch square pan.  Coat top of halves with cooking spray.  Bake at 350 degrees for 16-20 minutes.  Sprinkle with Italian seasoning and top evenly with dressing.  Add garnish if desired.
